Egg Curry in Coconut Milk

Ingredients

1. Eggs – 5, hard-boiled (Boil eggs for about 12 – 13 minutes. Rinse under cold running water. Shell, make a few  slits and set aside.)

2. Onion – 2 medium, thinly sliced (Makes about 2 – 2.5 cups, thinly sliced)

Ginger – 2 – 2.5 tsp, thinly sliced

Green chilies – 3 – 4, slit

Curry leaves – 1 sprig

3. Tomato – 1 small, sliced or chopped

4. Coconut milk, thin – 1 cup

5. Thick coconut milk – 1/4 – 1/2 cup

6. Turmeric powder – 1/2 tsp

Garam masala powder – 1 tsp or to taste (Recipe below)

7. Crushed black pepper – 1/4 – 1/2 tsp

8. Coconut oil – 1.5 tbsp

Mustard seeds – 1/4 – 1/2 tsp

Dried red chilies –  2, broken

9. Salt – To taste

Method

Heat oil in a deep pan / cheena chatti. Splutter mustard seeds and fry dry red chilies. Add sliced onion and little salt. Fry for a few minutes and add ginger, green chilies and curry leaves. Continue sautéing until onion turns soft and light golden. Bring down the heat and add turmeric powder and garam masala powder. Sauté for a minute and add chopped tomato. Cook for a few minutes. Add thin coconut milk. Cook over medium heat for 5  minutes, stirring in between. Check for salt. Add thick coconut milk, curry leaves and crushed pepper. Mix well and add the boiled eggs. Cook for 1 minute over low heat. Add a pinch of garam masala powder if required. Switch off.  It goes very well with idiyappam and palappam/kalappam.

Garam Masala Powder Recipe

Fennel seeds / perum jeerakam – 2 tbsp

Cloves / grambu – 6 – 8

Green cardamom/ elakka  – 5 – 7

Cinnamon stick / karuva patta – 1/2 inch

Kus kus / white poppy seeds – 1/2 tsp (optional)

Whole black pepper corns / kurumulaku – 1/2 tsp

Star anise / thakkolam – 1 small

Jathi pathri / mace – a small piece (optional)

Grind the above spices to a powder in the small jar of a blender or in a coffee grinder. Store in an air-tight container.
