Cold Chicken and Mayo Sandwich
1. White / brown bread slices – 8 – 10
2. Chicken, cooked and shredded – 1 cup, (Boil / Cook raw chicken cubes in 2 tsp oil adding salt and pepper. Cool down and shred into small pieces)
3. Cabbage – 1/2 cup, thinly sliced
4. Carrot – 2 tbsp, grated
5. Mayonnaise – 1/4 cup + 1 – 2 tbsp or as required
6. Salt, pepper – To season
Combine shredded chicken, sliced cabbage and grated carrot with mayonnaise. Season with salt and pepper. Cut the edges of the bread. Spread the chicken – mayo mixture. Cut into halves or triangles. Enjoy with a glass of orange juice.
You can use left over rotisserie chicken for this recipe.
