Mutta (Egg) Semiya – Kids’ Lunch idea 3
Another easy and yummy recipe..
Ingredients (Serves 2 – 3)
1. Roasted semiya / vermicelli – 1 cup
Water – Around 1.5 cups
2. Egg – 1, beaten with a tiny pinch of salt (You can use 2 eggs, if you want)
3. Coconut oil – 1 tbsp
4. Pearl onions – 10, thinly sliced
Green chilies – 3 – 4, cut into thick rounds
Ginger – 1/2 tsp,finely chopped
Garlic – 1/2 tsp, finely chopped
5. Turmeric powder – 1 pinch
6. Salt – To taste
Heat 1 tbsp coconut oil in a pan at medium heat. Add sliced pearl onions and saute until transparent. Next add green chilies, ginger and garlic. Cook for a minute. Add a pinch of turmeric powder and mix well. Add roasted vermicelli, mix well and stir for a few seconds. Add 1.5 cups of water and enough salt, to taste. Cover and cook for about 6 – 8 minutes until vermicelli is almost done. Taste-check for salt. Now move everything to the side and add beaten egg. Scramble the egg well and mix everything together. Cook for a minute at low heat. Switch off.
