Aloo bhindi

Ingredients (Serves 3 – 4)

1. Potato / Aloo – 3 small, cubed

2. Okra / bhindi – 15 – 20 small, cut into small pieces

3. Oil – 2 – 3 tbsp

4. Cumin seeds – 1/4 tsp

5. Onion – 3/4 cup, chopped

6. Ginger-garlic paste – 1 tsp

    Green chilly – 1, slit

7. Turmeric powder – 1/2 tsp

    Kashmiri chilli powder – 3/4 tsp

    Coriander powder – 1 tsp

8. Tomato – 1 small, sliced

9.Cilantro – 2 – 3 tbsp, finely chopped

10. Salt – To taste

Method

1. Heat 1.5 tbsp oil in a wide pan. Add okra pieces, a pinch of salt and saute for 4 – 5 minutes. Transfer to a plate.

2. Heat 1 tbsp oil in the same pan and splutter cumin seeds. Add chopped onion, little salt and saute until it starts to change color. Add green chilly, ginger-garlic paste and saute until their raw smell disappears. Add turmeric powder, kashmiri chilly powder and coriander powder. When their raw smell is gone, add potato pieces. Sprinkle little water and cover and cook, stirring occasionally until almost done. Add tomato pieces and cook for a minute. Next add fried okra pieces and mix well. Taste-check for salt. Cook for 5 – 6 minutes until the vegetables are slightly roasted. Switch off. Sprinkle chopped cilantro. Serve with chapathis or rice and dal.
