Ingredients (Serves 7- 8)
1. Potato – 3, medium-small, cubed
Cauliflower – 1 medium, cut into medium-large florets
Green capsicum – 1, thickly sliced
2. Oil – 3 tbsp.
3. Cumin seeds – 3/4 tsp
4. Onion – 1 medium-large, chopped
Ginger – 3/4 inch, chopped
Garlic – 4, chopped
5. Turmeric powder – 3/4 tsp
Chilly powder – 1 tsp
Coriander powder – 1.5 tsp
Garam masala powder – 1 tsp
6. Tomato – 2 medium, chopped
7. Green chilies – 2, chopped
8. Black pepper powder –1/2 tsp
9. Cilantro – 3 – 4 tbsp.
10. Salt – To taste
Method
Heat oil in a pan at medium heat and splutter cumin seeds. Add onion, ginger and garlic. Saute until transparent. Add the spice powders and saute until their raw smell leaves. Add potato and cauliflower pieces. Stir for 2- 3 minutes. Add chopped tomatoes, enough salt and mix well. Next add capsicum. Mix well. Cover and cook until the vegetables are done, stirring twice or thrice in between. Open the lid and cook for a couple of minutes until the most of the moisture evaporates. Sprinkle pepper powder, chopped cilantro and serve hot with chapathis.
