Ingredients (Serves 3)
1.Linguine pasta or any pasta you prefer – 1/2 package (Around 6 – 8 oz)
2. Carrot – 1 medium, peeled and diagonally sliced
Broccoli – 1 cup, cut into medium florets
Red bell pepper – 1/2 cup, sliced
Fresh green peas – 1/4 cup
3. Butter – 2 tbsp (Use flavored butter for extra taste)
4. Dried thyme – 1 pinch
Dried oregano – 1 pinch
5. Parmesan cheese – 3 – 4 tbsp, grated
6. Salt and pepper – to taste
7. Marinara sauce – 1/2 cup
Method
1. Cook pasta according to package directions. Two minutes before the pasta is ready to drain, add carrot, broccoli, red bell pepper and fresh green peas. Cook for two minutes. Drain well and transfer back to the pot. Add butter, dried thyme, dried oregano, 2 – 3 tbsp parmesan cheese, salt and pepper. Mix well.
2. In a serving bowl, place 2 – 3 tbsp marinara sauce. Top it with hot pasta. Sprinkle a tbsp of parmesan cheese and serve immediately.
