Ingredients (Serves 4)
1. Okra – 20 – 25, cut into rounds
2. Potato – 1 large,cut into small cubes
3. Oil – 1.5 – 2 tbsp
4. Onion – 3/4 cup, chopped
5. Turmeric powder – 1/2 tsp
Chilly powder – 1 tsp
6. Lemon juice – 2 tsp
7. Salt – To taste
Method
Heat oil in a non-stick pan at medium-high heat. Add chopped onion and saute for 2 minutes. Next add okra, potato pieces, turmeric powder, chilly powder, lemon juice and salt. Mix well. Cook for 10 – 12 minutes stirring occasionally until the vegetables are done and slightly roasted. Serve this delicious bhindi bhaji with rice / chapathi.
