Ingredients
To grind to a coarse mixture
1. Pearl onions – 5
Green chilies – 1 – 2
Ginger – 1/2 inch piece
Garlic – 4
Roughly chop the above ingredients and grind to a paste. Set aside 1 tsp of this mixture to use later.
To marinate
2. Chicken drumsticks – 5 – 6, cleaned
Ginger-garlic-green chilly paste – 2 tsp
Turmeric powder – 1/2 tsp
Kashmiri chilly powder – 1 tsp
Garam masala powder – 1/2 tsp
Salt – To taste
Marinate the chicken pieces with the above ingredients. Set aside for at least 30 minutes.
For the roast
3. Coconut oil – 4 – 5 tbsp
4. Onion – 1 medium-small, thinly sliced
5. Potato – 2 small, sliced
6. Curry leaves – 2 sprigs
7. Ginger-garlic green chilly paste – 1 tsp
8. Turmeric powder – 1/2 tsp
Kashmiri chilly powder – 1 tsp
Garam masala powder – 1/2 tsp
9. Tomato – 2 small, chopped
10. Hot water – 3/4 cup
11. Freshly ground pepper powder – 3/4 tsp or to taste
Garam masala powder – 1 pinch
12. Salt – To taste
Method
1. Heat 4 – 5 tbsp coconut oil in a heavy-bottomed pan at medium-high heat(I used a wide non-stick pan). Add the thinly sliced onion and fry until brown, stirring in between. It takes about 10 minutes. Drain on to a paper towel. Add the potato pieces and fry them. Add salt when they are half-done. Transfer to a paper towel when they are completely done. Next fry curry leaves until crisp. Set aside.
2. In the remaining oil, fry the chicken pieces in on both sides until browned on all sides. Drain on to a paper towel and set aside.
3. To the same pan(add more oil, if required, we need only around 2 – 3 tsp oil), add the coarsely ground mixture and saute until their raw smell leaves and mixture turns light brown. Add the chopped tomatoes. Mix well and cook until tomato is mashed up and oil separates. Now add the fried chicken pieces and 3/4th of the fried onion. Mix well and add 1/2- 3/4 cup hot water. Cover and cook for 10 – 15 minutes. Add half of the fried potatoes and mix well. Next add fresh ground pepper powder, a pinch of garam masala powder and mix well. Switch off. Serve with pulao, rice or chapatis.
