Pasta Aglio E Olio
A simple yet delicious Italian pasta dish made with garlic, extra virgin olive oil and parsley that can be served as a main paired with a nice crusty bread and salad or as a side-dish with grilled chicken , fish etc. With just a few ingredients, its one of the easiest and flavorful pasta dishes that you can make.
Spaghetti Aglio E Olio
Spaghetti – 1/2 pound
Extra virgin olive oil (of good quality) – 3 tbsp
Garlic cloves – 6 large, cut into thin rounds
Crushed red chilly flakes – 1/2 tsp
Fresh Italian parsley – 3 – 4 tbsp, finely chopped
Salt and pepper – To taste
1. Cook the pasta according to package instructions until al dente. Reserve 1/4 cup pasta cooking water.
2. Place 3 tbsp olive oil and garlic in a pan. Switch on the heat to low-medium and cook until garlic turns light golden and fragrant. Add crushed chilly flakes and stir for a second. Finally add cooked pasta and 1/4 cup hot pasta cooking water. Toss well. Drizzle a tsp of extra virgin olive oil, a pinch of pepper (optional) and sprinkle chopped parsley. Toss again. Serve hot. You may sprinkle 3- 4 tbsp grated parmesan cheese while serving but its completely optional.
