Ingredients (Serves 4 – 5)
1. Okra / vendakka – 20 – 25, quartered
2. Oil – 1.5 tbsp
3. Crushed red chilies – 1/2 tsp (optional)
Onion – 3/4 cup, thinly sliced
Green chilies – 2 – 3, slit
4. Salt – To taste
Method
Heat oil in a wide non-stick pan at medium heat. Add crushed red chilies, onion and green chilies. Saute until onion turns transparent. Now add okra pieces, enough salt and cook for 10 – 15 minutes stirring occasionally until the okra loses its sliminess and starts to turn golden. You can cook for a few more minutes until they are roasted well. Serve with hot rice.
