Mutta Thoran / Scrambled Eggs–Kerala Style

Mutta thoran
Ingredients

1. Eggs – 3, beaten with a pinch of salt and pepper

2. Coconut oil – 2 – 3 tsp

Mustard seeds – 1/2 tsp

Dried red chilly – 1, broken

3. Grated coconut – 1/3 cup

Fennel seeds –1 pinch

Turmeric powder – 1 pinch

Green chilies – 1 – 2, chopped

4.  Pearl onions (or 1/3 cup chopped big onion)  – 10, thinly sliced or quartered

Ginger – 1/4 tsp, minced

Curry leaves – 1 sprig

5.  Tomato – 1/4 Cup, seeded and chopped

7. Salt – As required

8. Pepper powder – As required

 

Method
  1. Crush grated coconut along with fennel seeds, turmeric powder and chopped green chilies.
  2. Heat oil in a pan at medium-high heat. Splutter mustard seeds and fry dried red chilly.
  3. Add sliced pearl onions, ginger and saute till translucent.
  4. Add crushed coconut mixture and saute for 30 seconds.
  5. Add beaten eggs and scramble. Add chopped tomatoes when eggs are half-done. Cook until the eggs are completely done. Top with 1/2 tsp coconut oil and a few curry leaves. Serve immediately.

    Awesome recipe! Just wanna share with you mutta thoran(my grandmother’s recipe). It is one of the favorite dishes of my husband now. Please do try!
    Saute shallots, green chiili, curry leaves in oil and add grated coconut. When this whole mixture turns almost brown, add beaten eggs(eggs+turmeric powder+coriander powder+crushed pepper). Scramble, cook and …..ready to serve.!
