Ingredients
1. Eggs – 3, beaten with a pinch of salt and pepper
2. Coconut oil – 2 – 3 tsp
Mustard seeds – 1/2 tsp
Dried red chilly – 1, broken
3. Grated coconut – 1/3 cup
Fennel seeds –1 pinch
Turmeric powder – 1 pinch
Green chilies – 1 – 2, chopped
4. Pearl onions (or 1/3 cup chopped big onion) – 10, thinly sliced or quartered
Ginger – 1/4 tsp, minced
Curry leaves – 1 sprig
5. Tomato – 1/4 Cup, seeded and chopped
7. Salt – As required
8. Pepper powder – As required
Method
- Crush grated coconut along with fennel seeds, turmeric powder and chopped green chilies.
- Heat oil in a pan at medium-high heat. Splutter mustard seeds and fry dried red chilly.
- Add sliced pearl onions, ginger and saute till translucent.
- Add crushed coconut mixture and saute for 30 seconds.
- Add beaten eggs and scramble. Add chopped tomatoes when eggs are half-done. Cook until the eggs are completely done. Top with 1/2 tsp coconut oil and a few curry leaves. Serve immediately.

Saute shallots, green chiili, curry leaves in oil and add grated coconut. When this whole mixture turns almost brown, add beaten eggs(eggs+turmeric powder+coriander powder+crushed pepper). Scramble, cook and …..ready to serve.!
