Simple and delicious dhaba style chicken curry..
Ingredients (Serves 5 – 7)
1. Chicken, bone-in – Around 1 kg, cut into medium or medium-small pieces
Turmeric powder – 1/2 tsp
Pepper powder – 1/4 tsp
Salt – To taste
2. Oil + ghee – 3 – 4 tbsp
3. Whole spices – Black pepper corns – 1/2 tsp, cardamom – 3 – 4, black cardamom – 1, cinnamon stick – 1/2 inch, cloves – 4 – 5, bay leaf – 1
4. Onion – 1 – 1.25 cup, finely chopped
5. Ginger-garlic paste 1.5 tbsp
6. Yoghurt (not very sour) – 2.5 tbsp
7. Tomato – 1 medium, finely chopped
8. Turmeric powder – 1/4 tsp
Kashmiri chilly powder – 1 – 1.5 tsp
Regular chilly powder – 3/4 tsp
Coriander powder – 2.5 tsp
Cumin powder – 1/2 tsp
9. Kasoori methi – 1/2 tsp, crushed
Garam masala powder – 1/4 tsp (recipe below)
Butter – 2 – 3 tsp
Coriander leaves – 3 tbsp, chopped
Green chilies – 2, diagonally sliced
10. Salt – To taste
Method
1. Marinate the chicken pieces with all the other ingredients numbered 1. Set aside for atleast 45 minutes or overnight in the refrigerator.
2. Heat oil and ghee in a large heavy-bottomed pan. Add the whole spices numbered 3 and cook at medium-low heat until they are fragrant. Add finely chopped onion, little salt and saute until light golden in color. Next add ginger-garlic paste and saute until golden brown in color.
3. Add chopped tomato and cook until oil separates. Next add yoghurt and cook for 3 – 4 minutes at medium-low heat until oil separates. Add turmeric powder, chilly powder, coriander powder and cumin powder. Cook over low heat for 2 – 3 minutes until their raw smell disappears.
4. Add the chicken pieces, mix well and cook for 5 – 6 minutes, stirring occasionally until they are well-coated with the masala. Add around 1 cup hot water and bring to a boil. Cover and cook for 15 – 20 minutes at medium-low heat until oil separates and chicken pieces are done.
5. Add kasoori methi, butter, green chilies and 1/4 tsp garam masala powder. Mix well. Switch off. Serve the delicious dhaba style chicken curry with naan/chapathis or pulao.
Garam masala powder recipe
- Cumin seeds – 1 tbsp
- Black pepper – 1.5 tsp
- Cloves – 1/4 tsp
- Black cardamom – 1
- Cinnamon – 1/4 inch
Grind the above ingredients to a fine powder and transfer to an air-tight container. You need only 1/4 – 1/2 tsp for this recipe.
