Homemade Kalakand

Ingredients (Makes 6 – 8 squares)

  1. Whole milk – 2 cups + 2 cups

2. Vinegar – 2 tsp

Sugar – 1/4 cup or to taste

Ghee – 1 – 2 tsp

Method

1. Boil milk in a wide pan over medium-high heat. Stir continuously until milk reduces to half. Switch off the flame. Add vinegar little by little and stir continuously. You will notice fine curds of paneer forming. Once paneer is completely formed, strain the mix. Rinse with cold water immediately and set aside to drain completely.

2. Rinse the pan well and add 2 cups of milk. Bring to a boil and stir continuously until it reduces to half. Add drained paneer and mix well. Cook, stirring continuously until thick. Add sugar and mix well. The mixture will thin out a bit. Continue to stir for a few more minutes till thick. Add 1.5 tsp ghee. Mix well and cook for a couple of minutes. Switch off. Transfer to a bowl greased with ghee or lined with parchment paper. Decorate with chopped nuts and saffron. Cool for 3 – 4 hrs and cut into pieces. It tastes super yum..do give it a try. Enjoy!!
