Nadan Beef Stew Recipe
Ingredients (Serves 3 – 4)
- Beef (preferably beef with little fat / chuck roast) – 1/2 kg, cubed
Pepper powder – 1/4 tsp
Garam masala powder – 1/2 tsp
Salt – 1/2 tsp
Water – 2 – 3 tbsp
- Potato – 2 small, cut into large cubes
Carrot – 1 medium, cubed
- Coconut oil – 1.5 tbsp
- Whole spices – whole pepper corns – 1/2 tsp, cardamom – 3, cloves – 4 and cinnamon stick – 1/2 inch
- Onion – 1 medium, thinly sliced and halved
Ginger – 2 – 3 tsp, thinly sliced
Garlic – 2 tsp, chopped
Green chilies – 5 or as needed, slit
Curry leaves – 1 – 2 sprigs
Salt – To taste
- Medium thick coconut milk – 3/4 cup
- Freshly crushed pepper – 1/2 tsp
Garam masala powder – 1/4 tsp
Thick coconut milk – 1/2 cup
- Salt – To taste
- Coconut oil – 2 tsp
Cashews and raisins – 2 tbsp each
Method
- Pressure cook beef adding the other ingredients numbered 1 for about 4 – 5 whistles till done.
- Boil water in a saucepan. Add cubed potato, carrots and cook for 5 minutes till half cooked. Switch off and drain the water. Set aside until ready to use.
- Heat 1.5 tbsp coconut oil in a pressure cooker at medium heat. Add whole spices numbered 4. Next add onion, salt, ginger, garlic, green chilies and curry leaves. Cook until onion turns really soft. Add cooked beef pieces along with any gravy, cooked potato and carrot, 1/2 – 3/4 cup medium thick coconut milk and salt to taste. Cook covered over low heat for 15 minutes until the vegetables are completely cooked and beef turns soft. Add 1/4 – 1/2 tsp freshly crushed black pepper and 1/4 tsp garam masala powder. Add 1/4 – 1/2 cup thick coconut milk, 1 – 2 tsp coconut oil and a few curry leaves. Mix well. Taste-check for salt. Cook for 1 – 2 minutes over low heat (do not boil). Switch off. Serve with plain white bread or palappam after 15 minutes.
- Heat 2 tsp coconut oil in a pan. Fry cashews till light golden and then add raisins. Stir till cashews turn golden and raisins puff up. Pour this over the curry. Keep covered for 10 minutes. Enjoy the yummy mutton stew with plain white bread, appam, idiyappam, pathiri or chapathis.
