Ingredients (Serves 3)
1. Mango – 1, peeled and cubed
Water – 1/2 cup
2. Sugar – 1/4 cup
Water – 1/4 cup
3. Lemon juice – 1/4 cup (About 1 – 1.5 lemon)
4. Cold water – 1 – 1.5 cups
5. Lemon slices, mint leaves, ice cubes – To garnish
Method
1. To make sugar syrup – In a small sauce pan, combine 1/4 cup sugar and 1/4 cup water. Bring to a boil and simmer until sugar dissolves completely. Set aside to cool completely.
2. Blend the mango cubes with 1/2 cup water to a smooth puree. Strain to remove any fiber and keep aside.
3. In a pitcher, add the sugar syrup, mango puree and lemon juice. Mix well and add 1 – 1.5 cups of cold water. Garnish with lemon slices, mint leaves etc. Serve over ice.
