Cauliflower and Capsicum Stir-fry

Cauliflower bell pepper fry

Ingredients (Serves 3)

1. Cauliflower – 1 small, cut into medium florets (Makes about 2 cups)

2. Capsicum / bell pepper (green and red/orange) – 1/4 cup each

3. Oil – 2.5 tbsp

4. Cumin seeds – 1/4 tsp

    Dried red chilies – 2 (optional)

5. Ginger and garlic – 1.5 tsp each, minced (You can use 2 tsp ginger-garlic paste instead)

6. Onion – 3/4 cup, sliced

7. Tomato ketchup – 1.5 tsp ( You can use 3 tbsp finely chopped tomato / 2 tbsp tomato puree instead)

8. Kashmiri chilly powder – 3/4 tsp

    Coriander powder – 1/2 tsp

    Garam masala powder – 1 pinch

9. Cilantro / malliyila – 1/4 cup, finely chopped

10. Coarsely ground pepper powder – 1/4 – 1/2 tsp

11. Lemon juice  – 1 tsp

Method

1. Boil  water in a vessel adding 2 pinches of turmeric powder and enough salt. Add cauliflower florets and cook for 6 – 7 minutes until tender. Please do not overcook them. Drain the water and set aside.

2. Heat 2 – 2.5 tbsp oil in a pan. Splutter cumin seeds and fry dried red chilies. Add minced ginger and garlic. Stir for a few seconds and add sliced onion and little salt. Saute until onion turns transparent. Add tomato ketchup. Stir for 2 – 3 minutes. Next add coriander powder, Kashmiri chilly powder and garam masala powder. Stir for 30 seconds and then add cubed capsicum. Stir for two minutes and then add cooked cauliflower florets. Stir-fry everything for 1 – 2 minutes until the veggies are well-coated with the masala. Add finely chopped cilantro, coarse pepper powder and stir for a minute. Switch off. Sprinkle lemon juice and garnish with chopped cilantro. Serve this delicious cauliflower – bell pepper fry with chapathis / rice.
