A yummy soup with red lentils and vegetables..
Ingredients (Serves 5)
1. Masoor dal / red lentils – 3/4 cup
2. Oil – 2 tsp + 2 tsp butter
3. Onion – 1/4 cup, finely chopped
Garlic- 4 cloves, finely chopped
Carrot – 1 small, finely chopped
Celery – 1 stick, finely chopped
4. Tomato – 1 large, chopped
Turmeric powder – 1/4 tsp
Pepper powder – 1/4 tsp
5. Vegetable / chicken stock – 2 – 2.5 cup (I used chicken stock)
6. Salt – To taste
7. Parsley – 2 tbsp, finely chopped
Lemon juice – 1 tsp or to taste
Method
Heat oil and butter in a sauce pan at medium-high heat. Add onion, garlic, carrot, celery, a pinch of salt and pepper. Saute for 2 – 3 minutes. Add rinsed dal, chopped tomato, turmeric powder and saute for a minute. Add vegetable or chicken stock and cook covered for 20 – 30 minutes until the soup is medium thick. Taste-check for salt. Add chopped parsley, lemon juice and mix well. Yummy red lentil soup is ready..Serve hot!
