Ingredients (Serves 4 – 5)
1. Oil – 2 – 3 tsp
2. Garlic – 2 small cloves, minced
Onion – 1/4 cup, chopped
Carrot – 1/4 cup, chopped
Mushroom –1/4 cup, chopped (optional)
3. Marinara sauce – 1 cup or as required to taste
Hot water / vegetable stock – 1 – 1.5 cup
4. Orzo/ditalini or any small pasta– 3 tbsp
5. Zucchini – 1/4 cup, chopped
Yellow squash – 1/4 cup, chopped
Fresh green peas or cooked/canned garbanzo beans (whie chana) or cannellini beans – 1/4 cup
6. Spinach – 1/2 cup, chopped
6. Salt and pepper – To taste
7. Lemon juice – 1 tsp or to taste
Method
Heat 2 – 3 tsp oil in a saucepan at medium heat. Add onion, chopped carrot and mushroom, if using. Saute for 2 minutes. Add marinara sauce, a cup of hot water / stock and salt, to taste. Bring to a boil and add pasta. Cook for 6 – 8 minutes. Add zucchini, summer squash and fresh green peas. Cook for a few more minutes until the pasta is cooked until tender. Finally add chopped spinach. Cook for a minute. Taste-check for salt and switch off. Yummy marinara soup is ready! You can sprinkle some finely chopped fresh parsley and grated parmesan cheese if you want but it is optional. Serve hot with any crusty bread.
