Ingredients
1. Butter / olive oil – 1 – 1.5 tbsp
2. Potato – 4 medium, cubed
3. Onion – 1/2 – 3/4 cup, cut into small cubes
Red bell pepper – 1/2 – 3/4 cup, cut into small cubes
4. Salt and pepper – To taste
5. Garlic – 1 – 2 medium, finely chopped
6. Parsley – 1.5 tbsp, finely chopped
Parmesan cheese – 2 – 3 tbsp, grated (optional)
Method
Heat butter in a wide pan at medium heat. Add potato cubes and mix well. Cover and cook for 5 minutes. Add onion and bell pepper. Season with salt and pepper. Saute for 20 – 25 minutes at medium-high heat, stirring in between until potato turns golden brown. Add chopped garlic and cook for 1 – 2 minutes. Sprinkle parsley and parmesan cheese. Serve immediately with fried egg.
