Khara bath is a popular breakfast dish of Karnataka. It is prepared similarly to upma but its texture and taste are different because of the addition of extra ghee, spices and few other ingredients. It goes best with coconut chutney.
Khara Bath Recipe
Ingredients (Serves 3)
1. Roasted rava – 1 cup (Roast rava in a tsp of ghee until you get a nice aroma of roasted rava. Skip this step if you have bought roasted rava.)
2. Ghee – 3 tbsp
3. Mustard seeds – 1/2 tsp
Cumin seeds – 1/4 tsp
Urad dal – 3/4 tsp
Cashews – 3 tbsp
4. Onion – 1/2 cup, chopped
Green chilly – 1- 2, cut into thin rounds
5. Tomato – 1 medium, chopped
Carrot – 2 – 3 tbsp, chopped
Green beans – 2 – 3 tbsp, chopped
Capsicum, green – 2 tbsp, chopped
6. Turmeric powder – 1/4 tsp
Chilly powder – 1/2 tsp
Coriander powder – 1/2 tsp
Garam masala powder – 1 pinch (optional)
7. Hot water – 3 cups
8. Ghee – 1 tbsp
Grated coconut – 2 – 3 tbsp
Lemon juice – 1/2 – 1 tsp
Cilantro / coriander leaves – 2 – 3 tbsp, chopped
Method
1. Heat ghee in a kadai over medium-high heat. Splutter mustard seeds and fry urad dal and cashews until golden. Add onion, a pinch of salt and green chilly. Fry for a minute. Add carrot, beans, capsicum and tomato. Add salt, to taste. Saute for 2 – 3 minutes until tomato turns soft. Add turmeric powder, chilly powder, coriander powder and garam masala powder. Stir for a few seconds and add 3 cups of hot water. Mix well. Bring to a boil. Taste-check for salt.
2. Add roasted rava, little by little while stirring with the other hand. Mix well. Cover and cook for 3 – 4 minutes. Switch off. Open the lid after 2 – 3 minutes. Add 1 tbsp ghee, 2 – 3 tbsp grated coconut, little lemon juice and chopped cilantro. Mix well. Serve hot khara bath with coconut chutney / peanut chutney and filter coffee.
