Ingredients (Makes 12 – 15 cookies)
1. Rolled oats / uncooked oatmeal (not instant) – 1/2 cup
All purpose flour – 1/2 cup
Desiccated coconut – 1/2 cup
Salt – 1 pinch
2. Unsalted butter – 1/4 cup
3. Sugar – 1/4 cup + 2 tbsp
Honey – 1 tbsp
Boiling water – 1 tbsp
Baking soda – 1/2 tsp
Method
1. Preheat oven at 350 F.
2. Combine the dry ingredients numbered 1 in a large bowl.
3. Melt the butter completely in a saucepan over medium heat. Add sugar, honey, boiling water and baking soda. Mix well.
4. Add the above liquid mixture to the dry ingredients and mix well.
5. Grease a cookie sheet or line it with parchment paper. Place spoonful of the mixture (or roll them slightly with your fingers) on the cookie sheet about 2 – 3 inches apart.
6. Bake for 10 – 12 minutes or until the biscuits are golden brown. Cool on a wire rack. Store in airtight containers.
