Ingredients
1. All purpose flour – 1.5 cups
Baking powder – 1 tsp
Baking soda – 1 tsp
Cinnamon powder – 1 tsp
Salt – 1/2 tsp
2. Vegetable oil – 3/4 cup
Granulated sugar – 1 cup
Brown sugar – 1/4 cup
Eggs – 3
Vanilla extract – 1 tsp
3. Carrot – 1 cup, grated (Around 2 medium carrots)
4. Walnuts – 3/4 cup, roughly chopped
Raisins or dried cranberries – 3/4 cup
Method
1. Preheat oven at 350 F.
2. Combine the dry ingredients numbered 1 in a medium bowl.
3. Using an electric hand mixer, beat ingredients numbered 2 until combined. Add the grated carrots to this mixture and mix well using a spatula. Add the dry ingredients and mix well. Finally add in the walnuts, raisins and mix well. Pour this mixture into a greased or parchment paper lined 9 x 5 inch pan. Bake for about 1 hour until a toothpick inserted into the center comes out clean. Take it out and let it cool in the pan for 5 -10 mts or so. Cut into slices and enjoy the delicious carrot-raisin bread!!

Can we substitute all purpose flour with almond flour? On a no carb diet so looking for substitution.

Hi Maya, can v use wheat flour instead ?
I haven’t tried it with wheat flour before. You can give it a try with 3/4 cup all purpose flour and 3/4 cup wheat flour. If it works, then you can replace the all purpose flour completely with wheat flour.
