Green beans paruppu usili

Ingredients (Serves 6 – 7)

1. Green beans – 2 – 2.5 cups, chopped (You can use chopped cluster beans instead)

2. Turmeric powder – 1/4 tsp

    Salt – To taste

3. Toor dal and chana dal – 1/3 cup each (Soaked in enough water for 1 hr. Drain and set aside.

    Dry red chilies – 2 – 3

    Asafoetida / hing – 1/8 tsp

    Salt – To taste

To season

4. Oil – 1.5 tbsp

5. Mustard seeds – 1/2 tsp

    Curry leaves – A few


1. Cook green beans adding turmeric powder, salt and little water (around 3 – 4 tbsp). Set aside.

2. Grind the drained toor dal and chana dal along with dried red chilies, hing and enough salt to a coarse mixture. Roll into lemon-sized balls and flatten them.  Steam-cook for 5 – 6 minutes in a steamer / idli cooker. Set aside to cool off a bit. Crumble them with your fingers (or you can pulse in a mixie / grate them instead).

3. Heat oil in a pan and splutter mustard seeds and fry curry leaves. Add crumbled dal mixture and stir-fry for 2 – 3 minutes. Add cooked green beans. Mix well and stir for 1 – 2 minutes. Switch off. Serve green bean – paruppu usili with rice and other side-dishes.
