Vegetable Brinji Rice / Tamil Nadu Style Vegetable Pulao

Vegetable Brinji Rice

Ingredients (Serves 4 – 5 )

 

1. Basmati rice – 1.5 cups

2. Carrot –1 medium, sliced lengthwise

Green beans – 1/2 cup, cut into 3/4 inch pieces

Fresh / frozen green peas – 1/4 cup

Potato – 1 medium, cubed

Soy chunks – 1/4 cup (Soak soy chunks in hot water for 10 minutes, squeeze extra water and cut into halves)

3. Ghee / Oil – 1.5 tbsp

4. Whole spices – Bay leaves – 2 – 3, Cardamom – 4,  whole pepper corns – 1/4 tsp, cinnamon stick – 1/2 inch, cloves – 6

6. Onion – 1.5 cup, thinly sliced and halved

Ginger-garlic paste – 1.5 tbsp

7. Turmeric powder – 1/2 tsp

Chilly powder – 3/4 tsp

Coriander powder – 3/4 tsp

Gram masala powder – 1/2 tsp

Tomato – 1 small, chopped

Mint leaves –10 – 15 or 1/4  cup

Cilantro – 1/4 cup

Green chilies – 2 – 3, slit

8. Hot water – 3 cups ( You can use 3 cups thin coconut milk (moonnam pal) for an extra flavor)

9. Lemon juice – 1 tsp

Ghee – 1.5 tsp

10. Salt –  To taste

Method

1. Soak basmati rice for 20 – 25 minutes in enough water. Drain and set aside.

2. Heat 1.5 tbsp oil in a pan over medium heat. Add whole spices and stir until fragrant.  Next add sliced onion and stir until it is slightly colored. Add ginger-garlic paste and cook until raw smell of ginger-garlic paste is completely gone. Add all the vegetables and ingredients numbered 7 and little salt. Cook for 2 – 3 minutes.

3. Boil 3 cups of water adding enough salt.

4. Add drained basmati rice to the vegetables. Mix well. Add boiling water. Mix well. Adjust salt. Cover with lid. Cook over medium-high heat for 3 minutes. Bring down the flame to low. Cook for 5 minutes over low heat. Switch off the flame. Open the lid and gently mix everything. Cover with lid immediately and set aside for at least 10 minutes. Vegetable brinji rice will be perfectly done. Fluff rice carefully and transfer to a serving bowl. Garnish with fried cashews, raisins, fried bread etc. Enjoy this delicious pulao with raita, pickle and pappad. We had it with onion raita and chicken drumstick fry (less oil version).
