Couscous Salad
Ingredients (Serves 2 – 3)
1. Whole wheat couscous – 1 cup
Boiling water – 1 cup
Butter / olive oil – 2 – 3 tsp
Salt – 1/2 tsp
Boil 1 cup of water in a sauce pan adding butter and salt. Switch off. Add couscous. Mix well and cover with a lid for 5 minutes. Remove with a lid and fluff with a fork. Set aside to cool.
Other ingredients
2. Cherry tomatoes – 10 – 15, halved
Olives – 5 – 6, sliced
Cucumber – 1/4 cup, cut into thin pieces
Raisins – 3 tbsp (optional)
Almonds 8 –10 sliced and lightly toasted (optional)
Extra virgin olive oil – 2 tbsp
Fresh lemon / lime juice – 2 tbsp or to taste
Mint leaves – 8 – 10, chopped
Parsley – 3 tbsp,chopped (You can use cilantro instead)
Sugar – 1 pinch (optional)
Salt and pepper – As required to taste
3. Crumbled feta cheese – 2 – 3 tbsp
Method
Combine cooked couscous with all the ingredients numbered 2. Refrigerate for 1 hour. Sprinkle with crumbled feta cheese, before serving. Its healthy and super-yummy..Enjoy!
