Ingredients
1. White / whole wheat bread slices – 4
2. Softened butter – 2 – 3 tbsp
3. Green chutney – 3 tbsp (recipe below)
4. Tomato – 1 medium, seeded and thinly sliced into rounds
Red onion –1 small, thinly sliced into rounds
Green bell pepper – 1/4 cup, thinly sliced
5. Shredded cheese – 1/4 – 1/2 cup or as required
6. Sandwich masala / chat masala – 2 – 3 pinches
Method
Spread the softened butter generously on one side of a bread slice. Top it with 1 – 1.5 tbsp green chutney followed by a few tomato slices, onion slices and bell pepper. Top with sandwich masala/ chat masala and shredded cheese. Cover with another bread slice and grill until golden brown. Cut into triangles and serve hot with ketchup.
For Green chutney
Cilantro – 1.5 cup
Mint leaves – 8 – 10
Green chilly – 1 – 2
Grated coconut – 3 tbsp
Sugar – A tiny pinch
Lemon juice – 1 tsp
Salt – To taste
Grind all the above ingredients to a paste(no need to add water).
Tip
If you don’t have a sandwich maker, heat a tawa on medium heat, place the assembled sandwich and press down with a spatula or place a heavy weight on top until golden brown on both sides.
