Chicken Salad Sandwich – Kids’ Lunch Idea 8

Chicken salad sandwich

Ingredients (Makes 4 sandwiches)

1. Cooked boneless chicken, chopped – 1 cup (Cook chicken adding salt and 1/4 tsp pepper powder. You can use leftover rotisserie chicken, if you want)

2. Mayonnaise – 3 tbsp or as required to taste( You can use reduced fat or eggless mayo)

    Celery – 1 small stalk, finely chopped (You can replace it with finely chopped carrot instead)

    Grapes  – 7 – 8, halved (You can use chopped apple or dried cranberries instead)

    Almonds / pecans – 2 tbsp, sliced thinly

    Sprig onion – 2 tbsp, finely chopped

    Lemon juice – 1/2 tsp

    Yellow mustard – 1/4 tsp (optional)

    Sugar – A tiny pinch

    Salt and pepper – To taste

3. Bread slices/ english muffins – 8


In a medium bowl, combine chicken pieces along with ingredients numbered 2. Taste-check for salt. Serve on white/brown bread or English muffins.
