Ingredients (Makes 12 – 14)
1. Beetroot – 2 cups, grated
Grated coconut – 2 cups
2. Ghee – 2 tbsp
3. Milk – 1 cup
4. Sugar – 3/4 cup or to taste
5. Cardamom powder – 1/4 tsp
Method
Heat 2 tbsp ghee in a pan at medium-high heat. Add grated beetroot, coconut and saute for 5 – 6 minutes. Add a cup of milk and continue to saute until the moisture is mostly evaporated. Add sugar and cook for 10 – 15 minutes until you are able to roll it. Add cardamom powder and mix well. Shape into small balls and roll in grated coconut. It keeps well for a few days in the refrigerator. Enjoy!
