Ingredients (For one baked trout)
1. Trout – 1 medium-sized, cleaned
2. Turmeric powder – 1/2 tsp
Kashmiri chilly powder (good quality) – 1.5 tbsp
Pepper powder – 1/2 – 3/4 tsp
Chat masala – 1/8 tsp
Lemon juice – 1 tsp
Olive oil – 1 – 1.5 tbsp
Salt – To taste
Method
1. Clean, rinse, pat dry and make gashes on the fish.
2. Marinate it with all the ingredients numbered 2. Keep overnight in the refrigerator. Take it out 30 minutes before baking.
3. Heat oven at 375 F.
4. Line a baking tray / cookie sheet with aluminium foil. Grease the foil. Place the marinated fish on top. Bake for 15 – 20 minutes. Take it out and flip carefully. Drizzle a little olive oil. Put it back in the oven and bake for another 15 – 20 minutes. Now set the oven on broil mode. Broil for 5 – 6 minutes or until the top part crisps up a bit. Take it out of the oven. Serve after 5 minutes. We had it with sauteed brussels sprouts, toast and roasted sweet potatoes.
