Ingredients (Serves 3 – 4)
- Prawns – 15 – 20, cleaned
- Coconut oil – 3 tbsp
- Curry leaves – 1 – 2 sprigs
- Shallots / big onion – 3/4 – 1 cup, sliced
- Ginger – 1 tsp, crushed
Garlic – 2 – 3 tsp, crushed - Crushed red chilies – 3 – 4 tsp or as required (Add according to your spice tolerance)
- Garam masala powder – 1/4 tsp (optional)
- Salt – To taste
Method
- Heat coconut oil in a clay pot over medium heat. Add curry leaves and stir for a few seconds. Next add sliced shallots, a pinch of salt and cook till it turns light golden. Add crushed ginger and garlic. Continue to cook for a few more minutes till onion turns golden and the raw smell of ginger and garlic completely disappears. Add crushed red chilies and cook for a minute. Next add cleaned prawns, little salt and mix well. Cover and cook for 2 – 3 minutes. Open the lid and cook for 1 – 2 minutes till dry. Add a few curry leaves and 1 – 2 tsp coconut oil. Roast the prawns slightly and switch off the flame. Serve it with rice / chapathi. We had it with coconut rice and chapathi. It tastes super yum, do give it a try.
