Summer Corn Succotash

Corn Succotash

Ingredients (Serves 3 – 4)

Olive oil / butter – 1 tbsp

Onion – 1/3 cup

Fresh corn on the cob (cut the kernels off the cob)/ frozen corn – 1.5 cup

Lima beans – 3/4 cup (optional)

Red and green bell pepper – 1/4 cup each

Zucchini / summer squash – 1/2 cup, peeled and chopped

Cherry tomato – 8 – 10, halved or 1/3 cup chopped tomato (seeds removed)

Cilantro – 2 – 3 tbsp, finely chopped (optional)

Parsley –  2 tbsp, finely chopped

Salt and pepper – To taste

Lemon juice – 2 – 3 tsp

Feta cheese or parmesan cheese – 3 tbsp (optional)

Method

Heat butter in a large skillet over medium heat.
Add onion, corn, lima beans and cook for 3 – 4 minutes. Next add the bell pepper, zucchini and cook for 3 – 4 minutes. Season with salt and pepper. Add tomato and cook for a minute. Switch off the flame. Add lemon juice and minced cilantro/ parsley / basil/ mint leaves. Mix well. Sprinkle feta cheese, if using. Serve with grilled fish/chicken etc.
