Chocolate Popsicles

Ingredients (For 4 – 5 popsicles)

  1. Whole Milk – 2 cup + 1/2 cup

Sugar –  1/4 cup + 2 – 3 tbsp or to taste

2. Corn starch or corn flour – 1 tbsp

Cocoa powder – 1.5 tbsp (you can use upto 2 tbsp cocoa powder)

3. Salt – 1 – 2 pinches or to taste

Vanilla extract – 1/2 tsp

Semi-sweet chocolate chips – 1/2 cup

Butter – 1/2 tsp

Method

  1. Combine corn starch and cocoa powder in a bowl. Add 1/4 – 1/2 cup milk and stir until it forms a paste.

2. Add 2 cups of milk and sugar (1/4 – 1/2 cup) to a saucepan and keep on stirring until it is about to boil. Bring down the heat to low. Cook for a minute. Add corn starch and cocoa powder paste and stir continuously for 1 – 2 minutes until it thickens a bit. Switch off the flame. Add 1 –  2 pinches of salt, 1/2 tsp vanilla extract, 1/2 cup semi-sweet chocolate chips and 1/2 tsp butter. Let stand for 1 minute. Stir until smooth. Set aside to cool down completely. It will thicken further on cooking. Taste-check and add more sugar, to taste.

3. Pour into popsicle moulds and freeze for 6 – 8 hrs until set. When ready to eat, place the popsicle mould under hot running water for 15 – 20 seconds until the popsicle slides out or dip the molds briefly in hot water before unmolding. Do give this a try friends…tastes super yum!! Enjoy!
