Kosambari / Moong Dal Salad

Ingredients

  1. Moong dal / cherupayar parippu – 1/4 cup, soaked in water for 2 – 3 hrs and drained well

Cucumber- 1 medium, peeled and chopped

Cilantro – 2 – 3 tbsp, finely chopped

Carrot – 3 tbsp, grated

Onion – 2 tbsp, finely chopped

Green chilly – 1, minced

Lemon juice – 2 tsp or taste

Salt and pepper – 1 pinch

2. Grated coconut – 2 tbsp

Roasted peanuts – 3 – 4 tbsp

For tadka

3. Oil – 2 tsp

Mustard seeds – 1/2 tsp

Curry leaves – A few

Method

  1. Combine all the ingredients numbered 1,
  2. Heat oil in a small pan. Splutter mustard seeds and fry a few curry leaves. Pour over the salad. Mix well.
  3. Garnish with grated coconut and peanuts..It tastes really yum..do give it a try!
