Here is the recipe for a simple and tasty carrot cake. One of my friends shared this recipe with me and she tried it from here.
Ingredients
1. All purpose flour/maida – 2 cups
2. Granulated sugar โ 1 1/4 cup
3. Vegetable oil – 1 cup
4. Eggs – 3 large
5. Ground cinnamon powder – 1 tsp
6. Baking Soda – 1 tsp
7. Vanilla extract – 1 tsp
8. Grated carrots – 3 cups
9. Chopped walnuts – 1 cup
10. Salt – Around 1/2 tsp
Method
1. Beat sugar, oil and eggs in a bowl with an electric mixer on low speed until they are blended (about 1 minute). Add everything else apart from the carrots and nuts. Beat until blended for 1 minute on low speed.
2. Add the carrots and walnuts and stir them in. Pour into a 13 x 9 inch pan or two 8 inch or a 9 inch round pan. Bake at 350 F for 40 – 45 minutes or until a toothpick inserted into the center comes out clean . Allow it to cool down completely.
For the cream cheese frosting
Ingredients
1. Philadelphia cream cheese – 8 oz
2. Butter – 1/4 cup
3. Milk โ 3 – 4 tsp
4. Vanilla – 1 tsp
5. Icing sugar/confectioners sugar – 4 cups
Method
1. Beat the cream cheese, butter, milk and vanilla until smooth on low speed.
2. Gradually add in the icing sugar 1 cup at a time and beat until smooth.
3. Spread on the cooled cake. Store in a refrigerator.

looks very simple.Preparing carrot is very difficult to me always.I am going to try your version this saturday.
Since I had all the ingredients at home,tried it today itself.Very tasty and Moist Cake.
Made some changes though.
I used nicely ground wheat bran,mashed banana and some orange juice, along with Carrots,Walnut etc..So it was looking like a brown cake.
My little girl loved it and named it “Carrot brownie”:-))

how did u get ur icing so white??? mine turned out to be a light creamish colour and it wasn’t as firm as yours
Sorry for the late reply. My icing was actually creamish as you can see from the step picture (pic 5). The icing color in the main pictures appears white as I have used flash while taking them. Did u keep it in the refrigerator after spreading the icing? The icing will set within 1-2 hrs in the refrigerator.
I made this weekend and everybody liked it so much. It is very easy to make also. My kids loved too…

Tried a variant of this with a mixture of wheat flour and oats instead of maida.
Cake is firmer in texture yet tasty. But definitely a healthier bet.
