Ingredients (Makes 12)

1. All purpose flour – 1 1/3 cup
Baking soda – 1/2 tsp
Baking powder – 2 tsp
Sugar – 1/4 cup + 2 tbsp
Salt – 1 pinch
2. Butter – 6 tbsp, melted
Buttermilk – 3/4 cup + 2tbsp (or 1/2 cup yoghurt + 7 tbsp milk)
Egg – 1 large
3. Blue berries, fresh/frozen – 3/4 cup, make sure the blue berries are completely dry. Toss them in 2 tsp of flour in order to prevent them from sinking to the bottom.)
Method
1. Melt the butter, set aside to cool for a little.
2. Preheat oven to 400 F. Combine all the dry ingredients numbered 1 in a bowl. In a separate bowl, beat together the egg, buttermilk (or yoghurt and milk) and melted butter. Using a wooden spoon, pour the wet ingredients into the dry ingredients and mix gently. Do not worry about lumps, the important thing is that the mixture isn’t over-worked. Fold in blueberries gently, again keep mixing to a minimum. You could also add orange zest at this point if you want. Spoon into muffin cups until 3/4th full. Bake for 20 minutes by which time muffins should be risen and golden and firm on top. Eat warm or cooled with a glass of milk or with unsalted butter and blueberry jam.

Tried the recipe.. Sugar is very less…can I increase the sugar quantity to 1 cup instead of 1/4cup.

The original recipe calls for only 1/4 cup sugar, I added 2 tbsp extra. I recommend adding around 1/2 cup sugar, 1 cup might be too much for this recipe. These are breakfast muffins and I think they are supposed to be less sweet.
Can I use dried blueberries instead of fresh or frozen ones?
