Ingredients (Makes 2)
1. Eggs – 2, hard-boiled
2. Mayonnaise – 2 – 3 tbsp
Dijon mustard – 1/2 tsp (optional)
Finely chopped spring onion – 2 – 3 tsp
Lemon juice – 1/4 – 1/2 tsp (optional)
Salt and pepper – To season
3. White bread/ brown bread slices (I used 2 whole wheat English muffis)
Method
Chop the eggs into small pieces and place in a medium bowl. Add the ingredients numbered 2 and mix well.(If you want some crunch in your egg salad, add chopped celery / cucumber). Spread the egg mixture on top of two bread slices and put another slice of bread on top. Serve immediately!
