Thenga manga pattani sundal / Beach sundal
Ingredients (Serves 5)
1. Dried white peas (Vatana) – 1 cup, soaked in enough water for 8 hours
Raw mango – 1/4 cup, peeled and chopped
2. Oil – 2 – 3 tsp
3. Mustard seeds – 3/4 tsp
Curry leaves – 1sprig
Green chilies – 2, finely chopped
Ginger – 1/2 tsp, grated
4. Grated coconut – 3 tbsp
5. Salt – To taste
6. Lemon juice – 1 – 2 tsp or to taste
Method
1. Cook the soaked peas in enough water until soft and done (do not overcook, they should retain their shape).
2. Heat oil in a cheena chatti/ pan at medium heat. Splutter mustard seeds and fry curry leaves. Add green chilies, ginger and stir for 10 – 15 seconds. Switch off. Add grated coconut, raw mango and salt, to taste. Squeeze lemon juice, just before serving. Enjoy!
