Egg Chicken Rolls – Kolkata Style
Ingredients
1. Chicken, boneless (I used chicken breast) – 500 gm, cut into small pieces or sliced thinly
2. Ginger-garlic paste – 1 tbsp
3. Turmeric powder – 1/2 tsp
Red chilly powder (regular chilly powder + kashmiri chilly powder) – 2 – 3 tsp
Pepper powder – 1/2 tsp
Coriander powder – 1 – 1.5 tsp
Cumin powder – 3/4 tsp
Gram masala powder – 3/4 – 1 tsp
Kasoori methi, crushed – 3/4 tsp
(Instead of ingredients numbered 3, you can use 1.5 – 2 tbsp tandoori masala powder)
4. Lemon juice – 1 tbsp
5. Curd – 2 – 3 tbsp (optional)
6. Salt – To taste
7. Oil – 1.5 tbsp
Onion – 1, thinly sliced
Garlic- 2 cloves, chopped
Green capsicum / bell pepper – 1/2 cup, thinly sliced
To assemble
8. Cooked chapathi / tortilla / paratha – 6 – 8
9. Eggs – 6 – 8
Salt – As required to taste
10. Red onion – 1.5 cup, thinly sliced
Chat masala / black salt – A few pinches (optional)
11. Green chilly sauce – Few tsps
12. Tomato ketchup – Few tbsps
Method
1. Marinate the chicken pieces with ingredients numbered 2 – 6. Refrigerate overnight or for at least 2 hrs.
2. Heat 1.5 tbsp oil in a pan at medium heat. Add sliced onion, salt and saute until onion starts to change color. Add marinated chicken pieces and cook for 6 – 8 minutes until chicken is 3/4th done. Add chopped garlic and sliced capsicum. Cook until chicken pieces are completely done. Switch off.
3. Heat 1 tsp oil in a small pan at medium heat. Add a beaten egg and swirl it around so it spreads to the entire surface. ( Instead of this, you can pour the lightly beaten egg on cooked chapathi / paratha and spread it using a spatula to cover the chapathi completely. Cook for a minute and then flip to cook the egg completely.) After a few seconds, place a chapathi on top and press gently. Cook for a minute until the egg is done. Sprinkle little oil on the chapathi and then flip it. Cook for a few seconds. Remove it to a plate with the egg side facing up. Top it with cooked chicken, thinly sliced onion, a tiny pinch of salt/ chat masala, green chilly sauce and tomato ketchup. Wrap up the roll using an aluminium foil, paper towel or wax paper to hold it together. Yummy egg chicken rolls are ready to enjoy!!
