Fresh avocado toast

Smashed avocado on buttered toast..a great easy way to use avocados when they get ripe. This open-faced sandwich is quick, simple, healthy, delicious and super-filling. You can enjoy it for breakfast or as a snack. And you can top it with fried egg/ scrambled egg or sliced boiled eggs, if you prefer. I am sure it will be a hit with kids and adults alike. Enjoy!!

Fresh Avocado on Toast Recipe

Ingredients

Avocado, ripe – 1, pitted

Crusty French or Italian bread – 2 – 3 slices (Please use good quality bread as it makes a big difference in taste)

Salted butter – 1 – 2 tbsp

Radish – 2, thinly sliced

Salt and pepper – As required

Sea salt – optional

Method

  1. Spread butter on bread slices and toast them in a toaster oven / toaster/skillet until golden.
  2. Add avocado flesh to a small bowl. Coarsely mash adding salt and fresh cracked pepper. You need a chunky texture. Spread over toasted bread.
  3. Top with radish slices, sprinkle flaky sea salt (optional) and enjoy immediately!
