Ingredients ( Serves 2 )
1. Chicken boneless – 1 cup, chopped (You can marinate the chicken pieces with salt and turmeric powder but its optional)
2. Oil – 1 tbsp
3. Onion – 1/3 cup, finely chopped
Ginger – 1/2 tsp, finely chopped
Garlic – 1/2 tsp, finely chopped
4. Tomato – 1/2 small, chopped
5. Turmeric powder – 1/4 tsp
Chilly powder – 1/2 tsp
Cumin powder – 1/4 tsp
Pepper powder – 1/8 tsp
Garam masala powder – 1/4 tsp or to taste
6. Salt – To taste
7. Lemon juice – 1/4 tsp (optional)
8. Left over chapathi / tortilla – 4 – 5
Onion – 1/2 cup, thinly sliced
9. Shredded cheese – 1/2 –3/4 cup
10. Tomato ketchup / guacamole / sour cream – To serve
Method
1. Heat oil in a pan at medium heat. Add onion, ginger, garlic and little salt. Saute until onion turns light golden. Add tomato and saute for a few minutes. Add turmeric powder, chilly powder, cumin powder and pepper powder. Cook for 30 seconds until their raw smell disappears. Add chicken and cook for 6 – 8 minutes. Sprinkle garam masala powder and little lemon juice. Mix well and switch off.
2. Warm the chapathi / tortilla in a pan at medium heat. Sprinkle around 2 tbsp grated cheese on one half of the tortilla. Top it with 3 – 4 tbsp chicken filling followed by sliced onion and 2 – 3 tbsp shredded cheese. Fold the tortilla and place it on a tawa / flat pan. Press down with a spatula and cook for 1 – 2 minutes or until cheese starts to melt. Flip over to the other side and cook for another 1 – 2 minutes until golden brown and crisp. Transfer to a plate. Cut into 3 pieces and serve with tomato ketchup, sour cream or guacamole.
I have not tried this yet and sure looks easy to make. A quick and cheesy snack for weekends:)
