Ingredients (Serves 2)
1. Cooked rice (basmati or kaima rice) – 2 cups (Add salt while cooking rice. I used jeerakashala rice / kaima rice)
2. Ghee – 1 tbsp
3. Cumin seeds – 1/2 tsp
Whole spices – cardamom – 2, cloves – 4, cinnamon stick – 1/2 inch piece
Dried red chilies / slit green chilies – 1 – 2, broken
Cashews – 1 – 2 tbsp
Garlic – 1/2 tsp, minced
4. Spinach – 2.5 cups, thinly sliced
5. Salt – To taste
6. Fresh lemon juice / lime juice – 2 tsp or to taste
Method
Heat ghee over medium heat. Add cumin seeds and whole spices. Stir until fragrant. Add dried red chilies and cashews. Stir for a minute. Add minced garlic and stir for a few seconds. Add spinach and mix well. Stir for a couple of minutes until it begins to wilt. Add cooked rice. Add salt, to taste. Mix well and stir-fry for 1 – 2 minutes and switch off. Add fresh lemon juice and mix well. Serve with chicken curry or any other spicy side-dishes.
