Chimichurri is a fresh herb-based sauce from South America. It is traditionally made with parsley, little oregano, garlic, chili, red wine vinegar and olive oil. Some versions of chimichurri also use cilantro so I have used it here. Chimichurri can be used as a marinade or sauce…and it is best served with steak or grilled chicken.
Ingredients
Fresh Italian parsley – 1.5 cup
Oregano, dried – 1/4 tsp
Cilantro – 1/2 cup
Garlic – 2 – 3 large, mashed in a mortar and pestle
Lemon juice – 1 tbsp or to taste
Red wine vinegar – 1 – 2 tsp or to taste (Can be replaced with lemon juice)
Crushed chilli flakes – 1/2 tsp
Extra virgin olive oil – 2 tbsp or as required
Salt and pepper – To taste
Method
- Chop parsley and cilantro roughly and pulse 1 – 2 times in the small jar of a blender (do not grind to a paste) or crush in a mortar and pestle OR mince parsley and cilantro.
2. In a medium bowl, add crushed parsley and cilantro. Add dried oregano, mashed garlic, lemon juice juice, red wine vinegar, chili flakes, olive oil, salt and pepper. Mix well. Serve over steak/grilled chicken.
