Rava Kesari

Ingredients (Serves 5 – 6)

  1. Rava (fine, unroasted) – 1/2 cup

2. Ghee – 1 tbsp + 2 tsp

3. Cashews and raisins – 2 tbsp each

4. Ghee – 2 tsp

5. Water – 1.5 cup

Oil – 2 tsp

Food color (orange) – 1 pinch

6. Sugar – 1/2 cup + 1 – 2 tbsp

7. Cardamom powder – 1 pinch

Ghee – 2 – 3 tsp

Rose water – few drops (optional)


  1. Heat 1 tbsp ghee in a pan over medium heat. Add cashews and fry till light golden. Add raisins and fry till they puff up. Remove to a plate.

2. In the same pan, add 2 tsp ghee. Add fine rava and stir continuously over medium-low heat for 5 – 6 minutes (do not brown). Remove to a plate.

3. Add 1.5 cup water in a pan. Bring to a boil. Add 2 tsp oil and food color, if using. When it reaches a rolling boil, add roasted rava and stir continuously until the water is almost absorbed completely. Add sugar and cook for a minute or until thick. Add 2 – 3 tsp ghee, cardamom powder and few drops of rose water. Cook for a few seconds and switch off. Add fried cashews and raisins. Mix well and serve immediately.
