Ingredients
1. Eggs – 3
2. Oil – 2 tsp
3. Onion – 3 tbsp or 4- 5 pearl onions, finely chopped
Ginger – 1 tsp, minced
Green chilies – 2 – 3, minced
Turmeric powder – 1/4 tsp
Chilly powder – 1/2 tsp
Pepper powder – 1/4 tsp
4. Tomato – 1 small, chopped
5. Cilantro – 1.5 tbsp, finely chopped
6. Salt – To taste
Method
1. Heat 1 tsp oil in a non-stick pan. Add onion, ginger and green chilies. Saute until onion turns transparent. Next add tomatoes, little salt and cook until soft. Add turmeric powder, chilly powder, pepper powder and saute for a minute. Switch off.
2. Beat eggs in a bowl adding enough salt. Add chopped cilantro and sauteed onion-tomato mixture. Beat well.
3. Heat 1 tsp oil in the same pan at medium heat. Add beaten egg mixture and cook covered over medium-low heat until the bottom side turns golden. Flip gently and cook the other side. Switch off the flame. Serve as is or with rice and other side-dishes.
