Ingredients
1. Eggs – 3, hard-boiled and halved
2. Turmeric powder – 1/4 tsp
Chilly powder – 1/2 tsp
Pepper powder – 1/4 tsp
Cumin powder – 2 pinches (optional)
Besan / kadala mavu / chick pea flour – 1 tsp
Ginger – garlic paste – 3/4 tsp
Lemon juice – 1/2 tsp
Water – 1 tsp or as required
Salt – To taste
3. Oil – 2 – 3 tsp
4. Spring onion – 3/4 cups, finely chopped
Curry leaves – 8 – 10
5. Coarsely ground pepper – 2 pinches
Salt – 1 pinch
Method
1. Make a smooth paste of ingredients numbered 2. Taste-check for salt. Apply it on the egg halves.
2. Heat 2 – 3 tsp oil in a pan. Shallow fry the eggs until golden-brown, about 1 – 2 minutes on each side. Drain on to a paper towel.
3. In the same pan, add curry leaves, spring onions, a pinch of salt and pepper powder. Saute for a minute until the spring onion wilts. Add to the fried eggs. Mix everything well and serve immediately as a snack or with rice.
