Ingredients
1. Potato – 2 medium, sliced lengthwise
2. Carrot – 1 large, sliced lengthwise
3. Crushed chilly flakes (vattal mulaku chathachathu) – 1/2 tsp
Onion – Around 1 cup, thinly sliced
Garlic – 3 – 4 cloves, crushed
Curry leaves – A few
4. Turmeric powder – 1/2 tsp
Kashmiri chilly powder – 1/2 tsp
5. Salt – To taste
6. Freshly ground pepper powder – 1/4 – 1/2 tsp
7. Oil – 1.5 tbsp
Method
Heat oil in a pan. Add crushed chilly flakes, sliced onion, little salt, crushed garlic and curry leaves. Saute until onion turns light golden. Add turmeric powder, chilly powder and mix well. Add in the potato and carrot pieces, Mix well. Add enough salt. Sprinkle some water and cook covered for 8 – 10 minutes until the vegetables are almost done. Open the lid and cook for 5 – 7 minutes until the vegetables are slightly roasted. Sprinkle pepper powder and mix well. Serve with rice. We had it with rice, chemmeen pachakku arachathu, van payar thoran and pappadam.
