Today’s recipe is a very special one! For the very first time I am sharing with you an ice cream recipe, and you know what.. this ice cream was made with my own ice cream maker !!! I have shared my dream of making an ice cream using an ice cream maker here before, and two genie’s in the form of Suraj and Vini has made my wish come true and Voila! a brand new Cuisinart ice cream maker which came with an amazing booklet of ice cream recipes. I would never forget the day my first spoonful of Vanilla ice cream melted in my mouth! It tasted juuust like the store bought ones and I felt absolutely delighted! Now I am totally into ice creams and I lost count of the number of times I made them in different flavors. Our friends here also share the same excitement in having homemade ice creams and they all loved it !
So I am presenting the very best ice cream recipe today( our favorite), with an ice cream maker! Rocky road ice cream is a chocolate ice cream with chopped nuts, miniature marshmallows and chocolate chips.
People who don’t own a machine, please don’t feel bad! I will share the recipes for a no-machine delicious mango ice cream a friend shared recently, vanilla ice cream and my own recipes for avocado and a no-machine rocky road ice cream too :). So here goes the recipe for Rocky road ice cream !!
Ingredients
1. Condensed milk – 1 can (14 ounce)
2. Cocoa powder – 1/2 cup (I used Hershey’s special dark cocoa powder)
3. Heavy cream – 2 cups
4. Milk / light cream – 1 cup (I used milk)
5. Vanilla extract – 1.5 tsp
6. Miniature marshmallows – 1/2 cups
Mini chocolate chips – 1/4 cups
Roasted almonds, roughly chopped – 1/4 cup
Method

In a medium saucepan over low heat, stir condensed milk and cocoa powder until smooth and slightly thickened, 5 minutes. Remove from heat , and allow to cool slightly. Stir in heavy cream, light cream/milk, and vanilla extract. Cover and refrigerate for at least 2 hrs or overnight.

Pour mixture into the canister of an ice cream maker, and freeze according to manufacturer’s directions. Stir in marshmallows, chocolate chips and roasted almonds halfway through the freezing process. Once done, transfer to an airtight container and place in the freeze for a minimum of 3 hrs. Remove from freezer about 5 – 10 minutes before serving. Enjoy!
