Ingredients
1. Boneless chicken breasts – 2 (Around 450 gm. I used 5 chicken tenders), cut into 1.5 inch cubes
Salt – 1/4 – 1/2 tsp or as required
Pepper powder – 1/4 – 1/2 tsp
2. Olive oil – 2 – 3 tbsp
3. Panko bread crumbs – 1/2 – 3/4 cup or as required (You can use plain bread crumbs instead. I used 1/4 cup panko bread crumbs + 1/4 cup plain bread crumbs)
Parmesan cheese – 2 tbsp, grated
Italian seasoning – 1/4 – 1/2 tsp (Omit this if you are using Italian seasoned bread crumbs)
Garlic powder – 1/4 tsp
Coarsely ground pepper powder – 1/2 tsp
Chilly powder / paprika – 1/2 tsp
Salt – 1 pinch
Method
1. Season the chicken cubes with 1/4 – 1/2 tsp salt and pepper powder.
2. Place olive oil in a bowl.
3. In another bowl, combine the ingredients numbered 3.
4. Preheat oven at 425 F. Line a baking sheet with Aluminium foil and lightly grease it.
4. Coat the chicken cubes with olive oil and then roll in bread crumb mixture. Place on the foil. (You can coat them again in olive oil and bread crumb mixture, but that’s optional ). Spray the arranged chicken pieces lightly with olive oil/ any cooking oil spray.
5. Bake for 8 – 10 minutes at 425 F. Take it out and flip over to the other side. Continue to bake for 4 – 5 minutes or until done. Serve warm with ketchup / any dipping sauce you prefer.
