Ingredients (For 3)
1. Dosa batter - 2 cups
2. Oil – 1 tsp
3. Carrot – 1 small, chopped
Green beans – 6, chopped
Corn – 1/4 cup (You can also use chopped cabbage, cilantro and finely chopped green chilies)
Salt – 1 pinch
3. Grated cheese – 1/2 cup heaped or as required
4. Oil – 1- 2 tsp
Method
1. Heat 1 tsp oil in a pan at medium heat. Add chopped carrot, green beans and saute for a minute. Add corn, a pinch of salt and saute for one more minute. Switch off. Set aside.
2. Heat a non-stick pan (smear some oil if you are using a cast iron pan) at medium-high heat. Pour 1/2 – 3/4 cup dosa batter and spread to make a thin dosa. Drizzle 1/2 tsp oil/ghee and cook for a couple of minutes. Sprinkle some cooked veggies and 2 –3 tbsp of grated cheese. Cover and cook for a few seconds until cheese melts completely. Fold and serve hot. OR Sprinkle the veggies and cheese in the center of the dosa and fold the sides. Serve hot with tomato or coconut chutney.
