Beans mezhukkupuratti

Ingredients

1. Green beans – 200 gm, cut into 1 inch pieces and halved

2. Coconut oil – 1 tbsp

3. Pearl onions – 5, crushed

    Garlic – 2 small cloves, crushed

4. Green chilies – 2 – 3, slit

5. Turmeric powder – 1/4 tsp

    Chilli powder – 1/2 tsp

6. Salt – To taste

Method

Heat oil in a pan and add crushed pearl onions and garlic. Saute for a  minute. Add green beans, sliced green chilies, turmeric powder, chilly powder and enough salt. Mix well. Sprinkle a few tbsps of water. Cover and cook for a few minutes stirring occasionally until the beans are almost done. Open the lid and fry for 4 – 5 minutes until the beans are done and slightly roasted. Switch off and serve with rice and other side-dishes.

  • Maya, I have been following your blog & trying out your recipes, that are almost as good as my mom’s…. I was hoping to get some of her recipes from her cook book; unfortunately, I could not find her book of recipes after her death. Please post recipes from Kerala, especially the authentic recipes from Central Kerala, which I miss terribly. Please post great fish & mutton recipes along with vegetable recipes, too; simple yet with accurate measurements, for amateur chefs like myself.
